Here's the deal, I've eaten some amazing Italian food in my life. All the American crap places are ones that I wouldn't even touch. Burn down the Olive Garden. Buca di Beppo can go to hell. Maggianos should be plagued by locusts. The reason why is that they killed all the places where I could get amazing pasta and other things that just relied on a sense of texture, seasoning and taste.

Going to Marcello made me feel like I had been reborn into a place where there was a chef in the kitchen going, "this is the perfect firmness of pasta", "there's just the right amount of salt on this gricio", and "the amaretto in this tartuffo is just the right taste". These are people that regardless of whether I ordered Fanta because I don't drink instead of wine, they would not let the food be anything but the best they can do.

One of my best food experiences ever.

Hole in the wall restaurant that's been around since 1961. Specialty is rigatoni con pajata di vitello (rigatoni with veal intestines and red sauce). Trippa alla romana (Roman tripe) was delicious. Insalata arancia e finocchi (fennel and orange salad) was very fresh and tasty.

This is a hidden gem in a pretty low key area. Was packed with locals. Classic Roman dishes and the staff is really friendly. The Saltimbocca is excellent.

Established in 1961 in what appears like a rundown student block in San Lorenzo, Osteria da Marcello caters rare home made Italian authenticity. Only locals show up here to cackle and buzz on pasta. The taste softens the idea of premature cardiac arrest.
